Dhá Bhairille: A vatting of French Oak & Oloroso Sherry casks
Mashbill:
- 30% Malted Barley
- 40% Raw Barley
- 30% Wheat
Tasting Notes:
- Colour: Deep amber with wonderful copper hues, reflecting the richness of both cask types.
- Nose: A lush and vibrant nose. Bold sherry characters lead with dried fruits, milk chocolate, and hints of toasted oak. Notes of caramel and pine are then interwoven with fresh floral tones, creating a decadent and expressive bouquet.
- Palate: A savoury, complex, and textured palate. Pine nuts, hazelnuts, bitter orange zest, and candied orange peel unfold across the palate. The French oak influence adds depth and structure, while the wheat element adds wonderful baked goods and spices.
- Finish: Long, dry, and assertive. A spicy crescendo of black pepper and oak tannins ground the brighter notes from the palate with a lovely earthy warmth.
