Commonly referred to as P.X., Pedro Ximénez sherry is a firm favourite cask type here at Boann Distillery. These intensely sweet desert wines, made from the grape of the same name, impart wonderful deep dark flavours into any whiskey. Expect notes of raisins, dates, and dried figs, often combined with a spicy note, some earthy coffee tones and a fine dark chocolate profile.
